This rich, creamy mixture is usually served as a spread with bread or crackers. True taram, the salted and dried roe of gray mullet, is difficult to find. Smoked cod or carp roe is a good substitute; rinse under cold running water to remove excess salt.
Combine in a food processor or blender:
4 ounces smoked cod or carp roe, or dried gray mullet roe
Juice of 1 large lemon
Add:
2 slices firm white bread, trimmed, soaked briefly in water, and squeezed dry
With the machine running, gradually pour in:
1/2 to 2/3 cup olive oil
Taste and add more lemon juice if desired. Transfer to a small bowl and stir in:
1/2 small onion, grated and squeezed dry with a paper towel
